Why do we leave the cover up when grilling steak?

andrewdoane asked: I am told that when grilling a steak, one must leave the cover up on the grill so that it is only cooked on one side at a time. Why does this matter? Isn’t there a better chance of cooking all the way through if the cover is closed?Shawn
