What type of sausage do barbecue joints use?

rjamcfan asked: I love barbecue joints like Famous Dave’s. When I order their Hot Link Sausage, I’m always trying to figure out what type of sausage it is. Maybe its the cooking technique but it doesnt remind me of bratwurst or anything like that. Anybody know what type of sausage it is?Michael
