What is this “wet” barbecue everyone speaks of?
By Tom | March 13, 2009
I’m a cooking newb so I don’t really know what the difference is between wet and dry barbecue. I just read on some review site that Saz’s , a barbecue restaurant in Milwaukee , has the best of “wet” barbecue , and Memphis has pretty good “dry” barbecue. Can someone help explain the difference between the two?

if i came to your town and ordered “BARBECUE” at a restaurant, exactly WHAT would they serve me?
By Tom | March 12, 2009
the word has many different meanings all across america alone. exactly WHAT would i get? ingredients, sauces, preparation style, accompaniments, tell me all the tasty tidbits, including WHERE you reside for comparison.
i can scarcely imagine what icelandic barbecue might taste like…
in north carolina, “barbecue” refers to shredded pork, a tangy hot and sweet sauce added to it, served with slaw mixed in, either on a bun or not. anything “else” isn’t barbecue.

Nashville Locals: Where can I get really good barbecue in Nashville?
By Tom | March 12, 2009
I will be visiting Nashville for the very first time. I am looking for a local place that serves really good (regional style) barbecue.
I have friends who live in Memphis. When I went there, they took me to some great places (in Memphis). Unfortunately, I don’t know anyone who lives in Nashville. So I hope this forum can offer some good recommendations.
Thanks in advance.
Francis

I need an authentic Southern Barbecue menu?
By Tom | March 8, 2009
I’m from Maine and have no clue how to throw an authentic Southern Barbecue. If you know how, I’d value the help. For the meat, I’d prefer chicken over pork, though. Thanks!
