Cobb Dinner on the Quick!

So last night, I come home from work and for some reason, I am beat. Exhausted. Can’t keep my eyes open tired. Meanwhile my daughter is over and she’s got that “What’s for dinner?, look in her eye. The problem with being in this business – you have no excuse when somebody wants to eat. I came this close to calling for Chinese delivery or pizza when I said to myself; I can’t spend 20 bucks again when I have all this food in the house and a Cobb Grill calling my name.
So, I fire up the Cobb and I go to work. I head downstairs, open the chest freezer and I wait for an epiphany. Two frozen burger patties and some pierogi plant a mental suggestion in my head and I am off and running!
Pierogi always bring back fond memories of my Aunt Esther and Uncle Ed and upstate NY. I would always look forward to my summer time visits to their house in the country. They had 10 kids and always found the time to pay special attention to the cousin from the city. Uncle Ed called me Tiger and Aunt Esther introduced me to haloupki’s and pierogi long before they were available at your local quickie mart. But I digress.
So I plant the frozen patties on the counter and I follow the package directions for defrosting the pierogi in cold water and then patting dry with paper towels. I got out my trusty Cobb Wok and put it on the grill. To try and keep some of the cholesterol levels down, at least I’m telling myself this, I decide to fry the pierogi in vegetable oil versus butter. Believe me; I would have preferred butter but I am trying to live long enough to be a grandfather, so I went with the oil. I fried them to just short of a golden brown and then changed out the wok for the Cobb Griddle. I dusted the burgers with Bacon Salt and slapped them on the Cobb. I put the pierogi on the outter rim of the griddle to finish them up and keep them warm. In short order, I topped the meat with cheese, loaded them onto buns, added butter to the pierogi and we ate.

Strictly pedestrian fare, but every night can’t be foie gras and champagne, now can it? And by the way, Uncle Ed and Aunt Esther are still with us. Excuse me while I find their phone number and tell them how much they still mean to me.
