Mmm, mmm, good… CobbFire Shrimp!

grilled shrimpI went to the fridge last night, looking for something to throw on the Cobb for dinner. All I had that could be considered main course material was a bag of frozen cooked shrimp. What’s a fella to do? I could make little shrimp kabobs… you know, put them all on skewers and marinate them in balsamic vinegar, but that would be pretty labor intensive and time consuming.

Instead, I decided to try something I had seen a friend of mine do a few weeks before. He called it Campfire Shrimp, and that’s almost good enough for me. I’ll just tweak it and call it CobbFire Shrimp!

Ingredients: 1 bag frozen cooked shrimp- thawed, 3 tablespoons olive oil, 3 tablespoons Old Bay seasoning.

Combine all ingredients in a large Ziploc bag and shake to coat shrimp. Refrigerate one to three hours, or until ready to cook.

Fire up your Cobb Grill. Place the shrimp in a grilling basket and cook for 20 – 30 minutes, or until shrimp is tender and piping hot. Serve with fresh lemon wedges, tossed field green salad, and green beans ala Cobb.

I can’t tell you when I’ve enjoyed a shrimp dish more, and from start to finish this took me less than an hour.
