Dark Shadow asked:

I just got my rib rack in the mail today and I have some pork spare ribs on the gas grill right now. I’m cooking them indirectly at 225 f and have already coated them with barbeque sauce. I heard I should put some water in a pan but will that really help? I’ve always cook ribs in the oven so should I switch back?

As with anything you’ll need to use your rack a few times to get the hang of it. I would have coated the ribs a couple of hours before putting them on with a rib rub (Billy Bones is my preference). Then, at that temp, I would expect to cook them 5-6 hours, minimally. They may need more/less time depending on their thickness. Start checking them after 5 hours for doneness. During the last hour to 2 hours of cooking is when I’d put the sauce on at that temp. I am accustomed to indirect wood smoking at about 260 for 4-5 hours. Under those circumstances I’d put sauce on, if at all, during the last hour. I prefer dry ribs but that’s all a matter of personal taste. I don’t put additional water in my smoker but I rely on liquid from the wood - I soak it in water before I put it on. You should try it with water in a pan another time and decide which you prefer. Cooking ribs is as individual as there are cooks doing the cooking. Play around till you get a product that you and your family and guests love. Don’t switch back to the oven yet - give yourself a chance and I think you’ll perfect a product to crow about!

You could put water in, but you already sauced them. That should be enough liquid. I cook mine indirectly at 325 degrees on the gas grill. Top rack. I then put corn on the cob on the bottom rack for 45 minutes with water in the foil to help steam the corn.

When the ribs are done, pull from the foil or pan, and put directly in the flame for about 5-10 minutes each side, adding more sauce as needed.

Good Luck! I’m having homemade alfredo on angel hair with chicken. Ribs sound better!
