Grilling steak with a Mango sauce?

I love grilling but I really only use dry rubs for my steaks. I’ve never been into marinades or sauces for steaks. I bought this Mango BBQ sauce when I was in Hawaii & I have a question.

Do you normally put the steaks on the grill dry & then brush on your sauce while it’s cooking or do you marinate it first & then brush on more while cooking?

    You can typically do it either way.

    I’ve found success with tenderizing the meat and then getting a knife and poking small holes in the meat. Then I put it in a ziploc bag and throw in the marinade. The holes let the juices seep in so you get more of that flavor throughout. I normally don’t brush any on cause it doesn’t need it but you can also brush it on after if you need more.

    I’ve found that the brush method doesn’t give as much flavor as pre-marinading but that’s just my own personal taste.

    I usually just marinate them, but don’t brush on any extra. That Mango sauce sounds pretty good. You might want to try it on a white meat if it’s too sweet for steaks. It would be great on chicken or pork chops I bet.

    Not everyone likes sauces…how about warming it and serving it in a side dish. Then each person can spoon it over their meat if they wish.

    This sounds like a better sauce for pork tenderloin and chicken than for beef steaks. I would save it for that.

    Cook the steaks halfway to doneness. Add the sauce on top with a brush. Turn over and brush other side. Finish steaks to desired doneness.

    on one side layer the sauce on good and heavy. Place it on the grill sauce side down. Now coat the top and turn when necessary. finish cooking add more of the sauce and serve.

    Not my favorite but its good…

    Charcoal is wood= flavor

    Don’t brush w/ a sweet, sugary sauce until they are about 2 min from coming off the grill, or the sauce will burn and hte meat won’t get cooked. Serve additional sauce at the table.

    I marinate first then brush on more later. You have to be careful on how strong the marinade is though. You’ll have to experiment to see how strong it is. I only say this because I used a homemade mango bbq sauce (from a recipe book) once, and it was very citrus-y! It was tasty when I just brushed it on while grilling, but when I first tried it, I marinated it first. It came out way too tangy, way too citrus-y! I needed to pull it back the second time. Maybe that was just the recipe, or all citrus marinades are like that. Normally, though, I marinade first then brush later. Hope that helps!
