By Tom | August 1, 2007
Poppy asked:
According to the Vinager Instatute on the internet? (who knew) Vinager itself has an indefinant life span. But what about vinager barbecue sauce? The kind with just vinager and spices? Like Eastern Carolina, Central arolina, no tomato added..
Thank You in advance for oyur help!

If it’s really just vinegar and spices, it should last a long time, if it’s properly sealed and kept in the refrigerator. You don’t have to worry about it going bad, but it will start to dry out.
However, if it’s a commercially-prepared sauce, check the label. Most of these sauces have sugar in them. It should still last quite a while, but I’d sniff it before using it.

I would have to see the recipie to be sure but if it is just vinegar and spices you shouldn’t have to worry abt spoilage unless there are fresh herbs in it

It can last up to a month if stored properly, but for best results use it within a week or two.
The acidity of the vinegar kills most bacteria so if you keep it in a cool, dry place and well covered, it should be fine.

Most BBQ sauces contain mustard and catsup which are both vinegar based condiments. I would not keep a homemade sauce more than a couple weeks unless frozen.

I believe the added ingredients makes the BBQ sauce go bad cuz they don’t last as long as vinegar.
I prefer sweet tasting tomato based BBQ sauces on my pulled pork & chicken.
