Why do we leave the cover up when grilling steak?

I am told that when grilling a steak, one must leave the cover up on the grill so that it is only cooked on one side at a time. Why does this matter? Isn’t there a better chance of cooking all the way through if the cover is closed?

I close my lid. I have never heard of leaving it open.

steaks are really good and if we close the lid we might forget but with it open we can watch it, gotta cook them high and hott

By closing the lid it increases the heat. If you want a steak cooked all the way through I suppose it’s fine. I prefer my steak medium rare, so by leaving the grill open you have better control of the heat.

My guess is, so the heat isn’t contained and the steak doesn’t cook too fast on the outside.

You should not keep the top open because it would dry out the steak most of the time.

Unless you want a dried out piece of leather, you’d do better not to close the lid, as this causes the heat to be trapped and the juices to run out. Better to do one side first and turn over after a few minutes according to doneness of meat.

So when it flares up you can spray the flame down and not scorch the steak
