Zucchini and Summer Squash on The Cobb Grill

We were looking for a refreshing and simple side dish recently, and we decided to buy some zucchini and summer squash and grill them up on the Cobb. We sliced them up, brushed them with a little olive oil, sprinkled them with kosher salt and fresh black pepper, and rubbed them with couple garlic cloves. Then, we put them on the Cobb. The result was a fresh tasting, delicious summer vegetable.
What’s even better, we did up the veggies after we had cooked a main dish on the Cobb, with the residual heat that was still coming from the 8 charcoal briquettes we had started with. All told, we cooked for nearly three hours on just those few briquettes. I’m always astounded, no matter how many times I see the Cobb Grill perform. I never get tired of it.
Then, when we were all done, we tossed a couple of hot dogs on and cooked those too. Why? Just because we still had heat left over, and because, even with all the things we’ve made on out Cobb Grill, we’ve never grilled hot dogs. They turned out fantastic, and we could have kept going, if anyone had still been hungry. What a great grill!
